Northern Thai Noodles Curry

‘Khao’ means rice and ‘Soi’ means cut, and so the name of this dish depicts a large sheet of rice dough that is cut into thin noodle strips. However, the name is not as interesting as the taste of the actual dish. This dish, of Burmese-influence, utilizes a yellow curry powder. Traditionally, the curry is poured over noodles and chicken, to which lime juice, chili paste (made especially for Khao Soi) and crunchy noodles are added before being topped with pickled cabbage and fresh shallots as condiments.
